About us
Le Pavé serves the cooking of Aveyron and Auvergne in the heart of the 4th arrondissement, on rue des Lombards, between Châtelet and the Pompidou Centre.
The meat comes straight from Aveyron farmers, La Table de Solange: Aubrac cattle and mountain pork. It is written on the menu, and it explains the place given here to slow-confit brisket, knife-chopped tartare and rib of beef sold by the kilo.
Alongside the meat, the dishes that made the region's name: aligot, a potato purée beaten with fresh tome until it stretches; truffade; Saint-Nectaire gratin; grilled Aveyron sausage. The wine list leans towards the South West and the Massif Central, with a Marcillac served by the glass.
The house is open seven days a week, from 9am to midnight, and on Sundays from noon to 11pm.
