The story

About us

The jianbing 煎饼 is the breakfast that tens of millions of Chinese people eat standing up, on a street corner. A thin wheat and mung bean batter ladled onto a scorching hot plate, an egg cracked straight onto it, a house sauce of fermented soybean, coriander, golden fried onions, and a sheet of you tiao that brings all the crunch. It is folded, rolled, and handed to you still warm in its paper.

In China it is as ordinary as an espresso at the bar. In Paris, almost nobody had heard of it before Madame Guan opened in February 2025, at 63 rue Saint-Martin, a three minute walk from the Centre Pompidou.

Everything is made to order, in front of you. You pick the filling: minced beef with fermented black beans, five spice chicken breast, grilled bacon, the vegetarian double egg, or one of the five creative house recipes. You pick the heat too, from “not spicy” to “double spice”. Alongside the jianbing, the menu keeps the lesser known treasures of the Chinese street: hand folded xiao long bao, you tiao, the Chinese hotdog.

Order at the counter or online, then collect in about fifteen minutes. Open every day, 11am to 10pm.
