• The detail behind every line

  The line says what it is and what it costs; the detail sheet explains it. What the service actually includes, how it unfolds, what a trade word means to someone who has never heard it. Your customer opens the sheet if they want to know, and the list stays short for everyone else.

    50 cl· An Italian lager brewed in Lombardy since the end of the nineteenth century: pale, light and barely bitter. It is the gentlest draught on the menu, the one you order without thinking twice, served very cold. This is the happy hour price, every day from 3pm to 11pm.

This is the module of the service trades, hairdressing, healthcare, consulting, accommodation, and you are the one who picks which of the two suits you.

• The allergen filter and diets

  Your customer ticks what they cannot eat and the list clears in front of them; vegetarian dishes are spotted the same way. Every line carries its allergens at the foot of its detail sheet. This module only concerns food items: it does not spill over onto the services of other trades.

  On the line of a dish, the drink that goes with it, picked from the ones you actually serve, and the reason for the match in one sentence. Like the allergen filter, this module belongs to food and shows up nowhere else.

  • Pea velouté with hazelnut pieces8 €

    Their sheet describes an opulent attack and a wine that balances out on roundness: that roundness follows the cream binding of the velouté instead of working against it, and the rich finish they announce holds up against the toasted note of the hazelnut. At 5.00€ by the glass, it is the only proportion that holds in front of an 8 € starter.
